Three organic End of Summer Drinks
The Cheeky Panda | 15 Sept, 2020
Summer is slowly coming to an end, but that doesn’t mean the weather has cooled off! And what could be better than a delicious, cool lemonade on a lazy September evening?
We’ve got three tasty easy-to-make lemonade recipes with uncomplicated ingredients. To avoid refined and unhealthy sugars, our recipes use honey, but depending where you stand on the bee-bate, just use your sweetener of choice, like agave or date syrup – to turn your lemonade into a refreshing vegan heaven.
1. Minty Lem-Oh!-nade

6 organic lemons
6 organic limes
4 tablespoons of honey or your vegan alternative of choice
A big bunch of fresh mint leaves
Wash the lemons and limes in hot water and squeeze 2 lemons and 2 limes. Cut the remaining lemons and limes into slices.
Add the lemon and lime juice and the slices with 4 tablespoons of sweetener in 1 l mineral water and leave to stand for approximately 1 hour.
Wash the mint, shake dry and add to the lemonade.
Pour 4 l of well-chilled water on top, et voilà - your Minty Lem-Oh!-nade is ready!
2. Peach Beach Lemonade

6 flat peaches
2 organic lemons
A bunch of mint
1 ½ l water
This one is naturally vegan, with a fresh and delicate fruitiness that’s perfect for late summer nights! If you do like it a bit sweeter, you can always add some honey or agave syrup (or any other sweetener!).
Wash the lemon with hot water and peel before squeezing. Cut the peaches into pieces. Add the lemon peels, juice, water, and peaches into a bowl and bring your lemon-peach-water mixture to boil. Let simmer for about 25 minutes – add your sweetener now, if you’d like it sweet. Let cool, add fresh mint leaves, and find some stand for your feet. Your Peach Beach Lemonade is ready!
3. Summer Sunset Lemonade
Ah, a sunset at the top of a mountain. Or a hill. Or that mound at the other end of town. Wherever you like to watch your sunsets – we have the perfect lemonade for a perfect summer evening picnic.

1 tablespoon of juniper berries or blueberries
1 L fresh organic apple juice
2 tablespoons of honey or agave syrup
Two twigs of rosemary
Two twigs of lemon balm
Two twigs of sage
A handful of fresh basil leaves
A handful of fresh mint leaves
1 ½ L of water
Add the apple juice with your sweetener of choice into a pot and bring to boil. Crush the berries and add them with the herbs into the pot. Squeeze the lemons and add them to the mixture before taking the pot off the heat. Let cool for about 45 minutes. Once cooled off, pour the mixture through a sieve to catch all the bits.
Tada! Your lemonade is ready. Before serving, top of with icy cool water, add a few twigs for decoration – and, most of all, enjoy the sunset. Soon, it will be too cold…
